Mechado is a braised beef dish originating from the Philippines inspired by culinary methods of Spain, which it was a former colony of. Soy sauce and calamansi fruits are key ingredients to the braising liquid.

My mother in law taught me how to cook this dish. Of course, I always put my own twist in all of the dishes I cook. By no means this is not a traditional Bolivian dish. This dish is only cooked during Christmas time in Bolivia.
